America's New Year's Day Dish
Our New Year's Day family tradition is Crock Pot Pork and Sauerkraut with Cornbread. Here's why:
Pork is another New Year's favorite. It symbolizes progress and prosperity because pigs root forward when foraging. Dishes might include pork roasts, ham, or sausages.
Sauerkraut is particularly popular in areas with German influence, sauerkraut is often served with pork for added luck and because it's considered to symbolize abundance and wealth due to its long strands.
Cornbread is a staple in Southern cooking and is believed to represent gold, adding to its symbolism of wealth and prosperity.
Crock Pot Pork and Sauerkraut Recipe
Crock Pot Pork and Sauerkraut Ingredients
Three pounds Country Style Boneless Ribs
One teaspoon of Kosher salt
½ teaspoon Pepper
One yellow onion, thickly sliced
Three cloves garlic, pressed or finely minced
Two red apples diced large
One (24 oz) jar of Sauerkraut
½ cup apple juice
Crock Pot Pork and Sauerkraut Recipe Instructions
Heat a 12" skillet over med-high heat. When hot, add olive oil, then all of the ribs. Let them brown on one side for 4 minutes or long enough to get some color.
Salt and pepper the ribs.
Flip the ribs over and do the same on that side.
Add the ribs and juices from the skillet to a six-quart or larger slow cooker.
Add the sliced onion and the Garlic over the top of the ribs.
Drain ½ of the sauerkraut juice and set aside. Dump the sauerkraut and remaining juice over the meat/onions.
Add the apple and then the apple juice.
Cook on low for eight hours or High for four hours or until the ribs fall apart tender.
