3 Healthy and Easy Crock Pot Recipes

1. Crock Pot Turkey Chili


Crock Pot Turkey Chili Ingredients


  • 1 lb ground turkey

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 1 bell pepper, chopped

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (15 oz) kidney beans, drained and rinsed

  • 2 cans (14.5 oz each) diced tomatoes with juices

  • 2 tablespoons chili powder

  • 1 teaspoon cumin

  • 1/2 teaspoon paprika

  • Salt and pepper to taste

  • 1/2 cup chicken broth

  • Optional toppings: chopped cilantro, sliced green onions, shredded cheese


Crock Pot Turkey Chili Instructions


  1. In a skillet, brown the ground turkey with the onion, garlic, and bell pepper until the turkey is cooked through.

  2. Transfer the turkey mixture to the crock pot.

  3. Add black beans, kidney beans, diced tomatoes, chili powder, cumin, paprika, salt, pepper, and chicken broth to the crock pot.

  4. Stir to combine all the ingredients.

  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.

  6. Serve hot with optional toppings if desired.


2. Crock Pot Vegetable Stew

  • 2 carrots, peeled and sliced

  • 2 stalks celery, chopped

  • 1 onion, chopped

  • 1 sweet potato, peeled and cubed

  • 1 zucchini, sliced

  • 1 yellow squash, sliced

  • 1 can (14.5 oz) diced tomatoes

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 3 cups vegetable broth

  • 1 teaspoon dried basil

  • 1 teaspoon dried oregano

  • Salt and pepper to taste


Crock Pot Vegetable Stew Instructions


  1. Place all the chopped vegetables, diced tomatoes, and chickpeas into the crock pot.

  2. Pour in the vegetable broth.

  3. Add basil, oregano, salt, and pepper.

  4. Stir to combine everything well.

  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.

  6. Serve warm. This stew is great on its own or served over cooked quinoa or rice.

  • 4 boneless, skinless chicken breasts

  • 1 lemon, juiced and zested

  • 4 cloves garlic, minced

  • 1 teaspoon dried thyme

  • 1/2 teaspoon dried rosemary

  • 1 cup low-sodium chicken broth

  • Salt and pepper to taste

  • Fresh parsley, chopped (for garnish)


Crock Pot Lemon Garlic Chicken Instructions


  1. Place the chicken breasts in the crock pot.

  2. In a small bowl, mix together lemon juice, lemon zest, minced garlic, thyme, rosemary, salt, and pepper.

  3. Pour the mixture over the chicken.

  4. Add chicken broth to the crock pot.

  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through.

  6. Garnish with fresh parsley before serving.
